Carrot Cake

  • 3 cups flour
  • 2 cups sugar
  • 2 eggs
  • 1 cup salad oil
  • 1 8.5 ounce can pineapple, crushed, with juice
  • 1 cup pecans
  • 1 cup raisins, if desired
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 cups carrots, grated

Procedure:

1. Mix sugar and salad oil. Add eggs with mixer. Gradually add other ingredients, stirring by hand.
2. Bake in tube pan for 1 hour at 325 degrees.
3. Make topping by bringing to a boil 1 cup sugar, 1/2 cup of orange juice and 1 teaspoon orange rind.
4. Pour over hot cake.
