Spinach Cheese Dip
2 lb. Veleta cheese
1 - 8 oz. cream cheese
- 1 pkg. frozen chopped spinach, thawed and drained
- 12 slices of crisp bacon (crumbled into small pieces)
- 2 cans of Rotel tomatoes
Cut veleta & cream cheese in 1-inch cubes and add the 2 cans of Rotel tomatoes; Microwave on high until cheese
is melted then stir together. Add spinach and bacon and stir together. Heat over low heat to stay warm or turn
into bowl and serve hot as a dip with tortilla chips.
