Fiesta Chicken Casserole
Ingredients
- 1 pkg. refrigerated pie crust (need 2 crusts)
- 1 16 oz. jar chunky salsa
- 1 can Campbell's Condensed Cream of Chicken Soup
- 1 cup sour cream
- 2 c. shredded cheddar cheese
- 1 pkg. frozen whole kernel corn
- 3 to 4 cups of chicken (can substitute turkey)
- 1 can black beans, rinsed and drained
Preparation
- Preheat oven to 400 degrees.
- Lay out pie crust until they are room temperature (15 to 20 minutes).
- Mix together salsa, soup, sour cream, cheese, corn, chicken and beans in a large mixing bowl.
- Spoon the chicken mixture into a 13 x 9 x 2 inch baking dish.
- Unfold the pie crust. Overlap the pie crust and press together to make a 14 x 10 rectangle crust. Place pie crust over chicken mixture and trim any excess crust. Cut several slits in the top of the crust.
- Bake at 400 degrees for 45 minutes or until the crust is golden brown.
