Fiesta Chicken Casserole

Ingredients

  • 1 pkg. refrigerated pie crust (need 2 crusts)
  • 1 16 oz. jar chunky salsa
  • 1 can Campbell's Condensed Cream of Chicken Soup
  • 1 cup sour cream
  • 2 c. shredded cheddar cheese
  • 1 pkg. frozen whole kernel corn
  • 3 to 4 cups of chicken (can substitute turkey)
  • 1 can black beans, rinsed and drained

Preparation

  1. Preheat oven to 400 degrees.
  2. Lay out pie crust until they are room temperature (15 to 20 minutes).
  3. Mix together salsa, soup, sour cream, cheese, corn, chicken and beans in a large mixing bowl.
  4. Spoon the chicken mixture into a 13 x 9 x 2 inch baking dish.
  5. Unfold the pie crust. Overlap the pie crust and press together to make a 14 x 10 rectangle crust. Place pie crust over chicken mixture and trim any excess crust. Cut several slits in the top of the crust.
  6. Bake at 400 degrees for 45 minutes or until the crust is golden brown.
  7. ENJOY!
