Chicken Gumbo Creole

Ingredients

  • 1/4 c. canola oil
  • 1/4 c. all purpose flour
  • 1 chopped green bell pepper
  • 1 chopped onion
  • 2 cups of cooked chopped chicken meat (I use breast meat)
  • 1 can diced tomatoes with green chili peppers with liquid
  • 1 tablespoons chopped parsley (fresh is best)
  • 2 teaspoons Worcestershire sauce
  • 3 cloves garlic, minced
  • 1 tsp soy sauce
  • 4 dashes hot sauce
  • 1 cup frozen okra (optional)
  • Salt and pepper to taste

Directions:

Heat canola oil in a large pot or skillet on high heat.

Add in flour and cook, stirring constantly, for about 6 minutes or until mixture is a very dark gold color.

Reduce the heat to low and add your bell pepper and onion.

Cook for 12 minutes or until tender, stirring occasionally.

Add your chopped chicken, can of tomatoes with green chili peppers, Worcestershire sauce, parsley, garlic, soy sauce, sugar, salt, pepper, hot sauce and okra.

Stir together, cover and simmer for 25 minutes.
