Tex-Mex Dip

  • 3 medium avocados
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • ½ teaspoon pepper
  • 1 cup dairy sour cream
  • ½ cup mayonnaise
  • 1 package taco seasoning mix
  • 2 10½-ounce cans bean dip
  • 1 large bunch green onions, chopped with tops
  • 3 tomatoes, medium, chopped
  • 1 3½-ounce can ripe olives, chopped
  • 1 8-ounce package sharp Cheddar cheese, shredded

Procedure:

Peel, pit and mash avocados in medium bowl with lemon juice, salt and pepper. In a separate bowl, combine sour cream, mayonnaise and taco seasoning mix. To assemble: Spread bean dip on a large shallow serving platter; top with seasoned avocado mixture. Layer with sour cream mixture. Sprinkle with chopped onions, tomatoes and olives. Cover with shredded cheese. Serve chilled or at room temperature with tortilla chips.
