Carrot Cake
- 3 cups flour
- 2 cups sugar
- 2 eggs
- 1 cup salad oil
- 1 8.5 ounce can pineapple, crushed, with juice
- 1 cup pecans
- 1 cup raisins, if desired
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 2 cups carrots, grated
Procedure:
| 1. Mix sugar and salad oil. Add eggs with mixer.
Gradually add other ingredients, stirring by hand.
2. Bake in tube pan for 1 hour at 325 degrees.
3. Make topping by bringing to a boil 1 cup sugar, 1/2 cup of orange
juice and 1 teaspoon orange rind.
4. Pour over hot cake.
