Chunky Tomato Salsa

  • 16 – 20 medium ripe tomatoes
  • 6 medium-large Anaheim chilies
  • 1 tablespoon minced garlic
  • 4 –5 teaspoons salt
  • ½ teaspoon black pepper
  • ½ teaspoon honey
  • 1 cup white onion, chopped
  • ½ cup cilantro (parsley), chopped
  • 1 cup white vinegar (5%)
  • 1 small can tomato paste
  • 2 –3 small jalapenos

Procedure:

Wash and core tomatoes. Cup up all vegetables just enough to go through tube into food processor. Combine all ingredients in a large pot and cook until parsley is well wilted, and all is boiling. Place in jars and seal with lids that have been soaking in hot water. Check next day to see if lids have sealed.

Yield: 4 to 5 quarts
